Dill-Crusted Pork And Farro Salad

Dill-Crusted Pork And Farro Salad

INGREDIENTS
cloves garlic, finely chopped
1/2 c. dill, coarsely chopped
3 tbsp. plus 2 tsp olive oil
Kosher salt
Pepper
small pork tenderloins (about 1 1/2 lbs total), trimmed
1 c. quick-cooking farro
1/2 c. cherry or grape tomatoes, halved
1/3 c. pitted kalamata olives, chopped
2 c. baby arugula
3 oz. feta, crumbled (about 3/4 cup)
1/2 c. Greek yogurt
1 tsp. lemon zest
1 tbsp. lemon juice

 

DIRECTIONS
  1. Heat oven to 425°F. In a small bowl, combine garlic, half of dill, 2 tablespoon oil, and 1/2 teaspoon each salt and pepper. Pat pork dry with paper towel and rub with garlic mixture.
  2. Heat 1 tablespoon oil in a large skillet on medium. Add pork and cook, turning occasionally, until golden brown on all sides, 8 to 10 minutes total. Transfer to oven and roast until internal temperature registers 145°F, 9 to 11 minutes. Transfer to cutting board and let rest 5 minutes before slicing.
  3. Meanwhile, cook farro per package directions. Transfer to bowl and toss with tomatoes, olives, arugula, 1/4 teaspoon salt, and remaining dill and 2 teaspoon olive oil.
  4. In a small bowl, stir together feta, yogurt, lemon zest and juice, and 1/4 teaspoon black pepper, adding 1 tablespoon water to thin if necessary. Serve pork with farro salad and feta sauce.
