Fried Pecan Okra

Okra thrives in the scorching heat of humid summers, soaring skyward in its semitropical glory. Originally from Africa, it is as overtly Southern as sweet tea and kudzu. Luckily for us, we have the inside secret when it comes to figuring out what to do with the delectable pods of okra. No other people embrace okra as Southerners do. It’s the basis of plenty a Southern comfort food, from gumbo to salad. As Southerners do best, we fried it. This upgraded fried okra recipe comes together with crushed pecans and baking mix, which forms the crisp breading for this classic Southern-style vegetable side.

How to Make It

Step 1

Place pecans in an even layer in a shallow pan.

Step 2

Bake at 350° for 10 minutes or until lightly toasted, stirring occasionally.

Step 3

Process pecans, baking mix, and next 2 ingredients in a food processor until pecans are finely ground. Place pecan mixture in a large bowl. Add okra, tossing to coat. Gently press pecan mixture into okra.

Step 4

Pour oil to a depth of 2 inches into a Dutch oven or cast-iron skillet; heat to 350°. Fry okra, in batches, turning once, 5 to 6 minutes or until golden; drain on paper towels.

Step 5

*1 (16-oz.) package frozen cut okra, thawed, may be substituted.
