Ham-Hash Brown Casserole

In the South, we love ham, we love hash browns, and we love casseroles, so it comes as no surprise that this delicious breakfast-for-dinner dish is loved by all. With shredded hash browns, cream of potato soup, Alfredo sauce, cheddar cheese, melted butter, and buttery crackers, this decadent casserole is rich, filling, and worthy of a special occasion – or just a weeknight dinner! Flavored with zucchini, diced onions, bell peppers, and celery, it’s also pretty packed with vegetables. The real substance comes from the cooked ham – this comforting breakfast casserole also doubles as the perfect way to use up your Thanksgiving leftovers.

Step 1

Combine flour and 1/2 cup milk, stirring until smooth. Combine flour mixture, remaining 1 1/4 cups milk, mustard, pepper, and salt in a medium saucepan, stirring well. Cook over medium heat, stirring constantly, until milk mixture is thickened and bubbly. Remove from heat; add cheese, stirring until cheese melts. Stir in sour cream.

Step 2

Combine cheese mixture, ham, and hash browns in a large bowl, stirring well. Spoon potato mixture into a 13- x 9- x 2-inch baking dish coated with cooking spray. Cover and bake at 350° for 30 minutes. Uncover and bake 30 to 35 additional minutes or until golden.
