Maine Lobster Rolls

Boil two 5 or 6 oz lobster Tails for 3 to 4 minutes in water
with a tsp. of salt in the water. (forgot to mention the salt)

Take them out of the boiling water and put them in ice water
for 2 to 3 minutes. Take the lobster meat out of the shell and
cut it into nickle sized chunks.

Take the same boiling water and add 1 tbsp. sugar, 2 tbsp.
Old Bay, and 1/2 cup of half and half! Boil your sweet corn
in that water for 8 minutes!

In a small bowl mix 1 tsp. mayo, (update 1/2 tsp. Dijon mustard)
1 tsp. finely chopped celery and 1 tsp. finely chopped scallions.
Mix the mixture with the lobster meat and chill for 1 hour.

Take two sub type rolls and slice the sides off and brush
with butter, olive oil and garlic paste……..
(1/4 stick butter. 1 tsp. olive oil, 1 tsp. garlic paste)

Grill the sides of the rolls until golden brown then cut
a slot down the middle and stuff with the lobster meat.
Sprinkle a dash of dill on top.

In a shallow bowl melt 1 stick of butter and a heaping
tbsp. of Old Bay then roll your sweet corn in it! Great!
