Ingredients:
-NY Strip Steak (approx. 1 lb.)
-Light Olive Oil
-Kosher Salt
-Freshly Cracked Black Pepper
-Fresh Thyme
-1.5-2 Tablespoons Butter
-2 Cloves Garlic

Directions:
1. Remove NY Strip Steak from the fridge 1 full hour before cooking.

2. After 1 hour of resting time, sprinkle the exterior of the steak with a liberal coating of kosher salt and medium grain cracked black pepper.

3. Heat a cast iron skillet (or stainless steel skillet) over medium high heat. Allow a full 5 minutes for the skillet to come up to temperature.

4. Sear the fat cap of the steak for about 1-2 minutes.

5. Sear the sides of the NY Strip Steak for 3-3.75 minutes per side, until a crispy crust has developed

6. Turn the heat to medium low, seat the other side (opposite the fat cap) while the temperature reduces).

7. Once temperature reduces, add your butter, thyme, and garlic to the pan. Lay steak of it’s side and baste with garlic, butter, thyme mixture, flip steak every 30 seconds until all of the exterior is coated with the butter.

8. Remove steak from heat, baste with 1-2 spoons of butter mixture, tent with foil, and wait 10 minutes.

9. Remove foil and carve steak into thick strips.

10. Serve & enjoy!
